Is there a good family history software that is
set up for people who have had a legal change of name? This becomes very confusing with
all software I've found so far.

Legacy allows you to use whatever surname you wish. It will
automatically put in a surname but you can alter that yourself easily
enough and there is provision for notes to be added which allows you
to give the reason for the name change if it isn't as a result of
marriage or adoption.

you should always enter the birth name and use it all the way through
then as a fact enter "Also Known As"
FTM 16 will index one alternative name or spelling variation
for an unknown maiden name I put a - because it looks neater on charts
almost never use Mrs Mary Smith
in my trees she would be Mary - and her husband - Smith
A couple of times I might use Mary Mrs Smith as an alternative to Mary -
for a widow
it is up to you to use the practice which pleases you yourself
the advantage of using maiden / birth names is that they never change
some genealogists in USA use Mary (Maiden Name ) Smith

I use it in cases where the spelling is not clear, or in the case
where the person stopped using their first name in favor of their
middle name. As in the case of Samuel Hudson Fisher, AKA Hudsy
Fisher. Or Godfrey Felten, born Gottfried Veltin.
