I tried to start a list of individuals canonized by the Roman Catholic
Church who were or probably were armigerous. Would you mind taking a
look at it? I could use lots of help with this.

Well, there's Santo Domingo de Guzman (d. 1221), founder of the
Dominican order.
For obscure UK noble saints, how about Gilbert of Sempringham?

Impressive list, Seb! What about St Margaret of Scotland, or her son
King David - not sure if they were formally canonised?

I think St Margaret of Scotland died in the 11th century. If I am not
mistaken, the earliest evidence of heraldry was from the 12th century.
I think the first King of Scotland to use a coat of arms (that we have
evidence for) was King William I (d. 1214), after King David died.
I may be mistaken, however.
