Anyone out there know anything about this woman? I met her a few times
in the early 1980's but knew only that she was a Polish Countess. Any
help is appreciated.

You may know less about her than you think. There is certainly no Polish
countly family of that name. Looking at several armorials I can't find
information about any Polish noble family of that name.
As for Kazimiera Adrian-Adrianowska - if you web-search her surname you'll find
entries about a scholarship fund in her name and a reference to her memoirs.

I don't know, but I can say that Adrian-Adrianowska is not the name of a
comital family.

a large part of the Polish nobility became Austrian. Among these
families none of nobility under either names. Ask your countess
concerning her cowboyesse credentials. Certainly whe will have some!
