baking w/out eggs

One of my little ones in my care has an egg allergy. We all love baking. But
I am not a creative baker. I have always thought that was a good place to
follow directions precisely. Anyone have any ideas on how to sub other
ingredient(s) to bake things? Thanks!

To add to what other folks have said... Look for Depression Era recipes. In
that time there was a shortage of lots of things, so there were recipes
developed without eggs (and lard, which is why the following cake recipe has
vegie oil). You should try checking out "Vegan" cookbooks. ALSO... my 1975
version of the "Joy of Cooking" has several "no egg" (and "no flour")
recipes:
NOT get the most recent "Joy of Cooking", that is an abomination and is
really yucky)
One recipe for Mix-in-the-Pan cake from that era is:
Sift into a 9" x 9" square baking pan:
1 1/2 cup flour
1 cup sugar
3 tablespoon unsweetened cocoa powder
1 teaspoon baking soda
1/2 tsp salt
Mix it up... and make three holes.
In one hole put in 6 tablespoons of vegitable oil
In another hole put in 1 teaspoon of vanilla
In the last hole put 1 tablespoon of vinegar (not work very fast... because
it is now reacting to the baking soda!).
Pour 1 cup of water over it all and mix quickly (the oil tends to congregate
near the corners).
Put into a 350 degree oven for 40 minutes.
Serve with whipping cream or frost with an eggless buttercream frosting.

Thanks EVERYONE. I am sort of web-search impaired. When I went to find eggless
recipes, I got mostly egg substitute (egg whites) which I imagine are useful
for people watching their cholesterol. Not so useful for me. Again, thanks.

This website is quite good for allergy recipes. You can sign up for
free and create a profile with the ingredients you are avoiding (eggs
in your case). Then when you search the recipes, all recipes with egg
will be automatically filtered out. You can also just browse. The
recipes lean toward overly healthy, but there are still a few cookie
recipes and such.

Look for egg replacer powder in your supermarket or health food store. You might have to ask around. The box I have is Celimix brand and contains: corn starch, potato starch, soy flour, baking powder and guar gum. Instructions are on the box.

Try a tablespoon of soy flour per egg and ajust the liquid if you
absolutely ahve to.

I have an awesome sugar cookie recipe that uses no eggs. web-search
"Killer Butter Cookies" in rec.food.cooking and you will find it.
