Not sure why but I've never watched the show before.
Is it ok to start watching from the start of season 3 or do I need to have
seen season 1 and 2 first?

It would really have helped if you had seen the special episode that
preceded the premiere this week, because it had a lot of flashbacks, but I
think you can pick up now and still enjoy it. I say that, because it's a
show about relationships, and you'll quickly identify the personalities and
who digs who.
I checked ABC to see if they had that preview or recap show on their site,
but they don't. They do have however, the premiere show of this season, if
you haven't seen it. And as mentioned by someone else, there are many blogs
discussing the show.

Well, I'd always recommend watching from the beginning, but if you saw
the premiere episode of season 3 the other night, there were enough
flashbacks (from pre-series events) to probably lay a decent-enough
foundation to the current storylines. If you did see this episode, you
could probably get by with just skimming through some written synopses
from the first two seasons.

The problem with the flashbacks in this episode is that they really only
have much meaning if you know what came after.

I think you will catch up by watching this season. They usually have
a lengthy recap before each episode, sometimes going all the way back
to the beginning. The only thing that might not make sense to you is
how all the main characters got paired up and some of their personal
history, but you should know going in that you're missing that.
