I'm coming into this late but just wanted to point out:

AB says they're useless, but he keeps it in when baking a turkey so
juices don't leak out the hole. He takes it out for deep frying.

Actually, Alton did say on his roast turkey episode to leave it in so
the juices don't leak out, _however_, on his most recent deep-fried
turkey episode, he did say to throw it out for the obvious reason that
it would melt and contaminate the oil.

I'm just glad that he gets the point across that those pop-up dealies
are useless
