Fortunately, CBS has now made available an "official" map of Jericho KS:
You will notice I-70 and State Route 83 both go into Jericho. If you
take a map of "real" Kansas, you can find where those roads intersect
and that's where Jericho is supposed to be. It looks to be maybe 100
miles east of the Colorado border:
What they're seeing from Jericho are the mountains in nearby Colorado.

But were ever it is, the towns folk of Jericho can see snow covered
mountains on the distant horizon.
Which has me puzzled no end, because the highest mounting in Kansa is "Mount
Sunflower" and this mountain is only 4,039 feet tall.
To the north of the Kansas state line is Nebraska, with its highest mountain
"Panorama Point" which stands at 5,424 feet tall.
To the east of the Kansas state line is Missouri, with its highest mountain
"Taum Sauk mt." which stands at 1,772 feet tall.
To the south of the Kansas state line is Oklahoma, with its highest mountain
"Black Mesa" which stands at 4,973 feet tall.
To the west of the Kansas state line is Colorado, with its highest mountain
"Mount Elbert" which stands at 14.433 feet tall.
Now since our hero drove from Denver, Colorado to Jericho, Kansas, almost
due east, that would put his home town some were along Inter State Highway
70.
