What is all the talking/playing at the end, besides John saying his own
name?

The voice is Lennon's, but it's actually a backwards excerpt of his
voice from the FAAB demo saying "Turned out nice again", a catchphrase
of British music hall and movie entertainer George Formby (also a
ukelele player and idol of G. Harrison - that's why there's a uke
playing along with the voice.) There's an anecdote of Paul's around
somewhere relating how they took the snippet and mixed it in backwards
as a goof and an homage to those famous Beatles backwards "hidden
messages", but when they heard it, and heard John saying his own name,
they were amazed and felt like it was John's own joke on them.

While someone else already answered your question,
I want to add a related story I once read:
At the end of the the clip you can see a uke player
performing (filmed from the back). I think this is
George Formby. George Harrison actually wanted
to do this bit (film-wise, not audio) but the producer
didn`t want to give him a "solo-spot" on a otherwise
Beatles-clip, which he regretted afterwards.
