Is there any clue as to a range of birth dates contained in the GROS
codes, e.g. 644/05? Would the '05' have anything to do with the month
of May, or is that a coincidence?

/5 indicates the record is within a subdivision of the main
registration district. The original indexing will be 644 followed by a
superscript 5. In this case 644 is the main number for Glasgow and if
it matches the 1901 census list in:-
are erroneous on this list)
it is Glasgow Blackfriars.

I'm trying to find workaround ways of getting around hemorraghing money
on scotlandspeople.gov.uk, since the search interface for the SRI
births doesn't let you search as finely as by month.
Thanks, if you have any tips!

*** As Charles says, the /05 is a geographical subdivision, indicating
it is the fifth separate subdivision within Glasgow. Each is normally
representing one local registrars area within the Glasgow Registration
District. All the larger cities such as Ediunburgh and Aberdeen, have
such subdivisions. They enable you to get right to the correct volume
for your BDM certificate, or census book.
