What happens to the olives after they're harvested?

We have them pressed for oil.We bottle some of it under our label "Giardini
Grove" - that is retailed and also goes into our gift basket business.Some
is sold bulk to a local olive /oil/gourmet shop.

Are they for eating or for oil? Are they green or black?

The olives mature from green to black,I pick when there is a mix of colour
on the trees.This gives a nice balanced flavour.The more mature the stonger
the flavour :-)

The olive grove is just a sideline really,we just happened to buy a property
with a grove.
I love it though.

Our main business is a gift basket company,we supply car dealers and real
estate agents.
We produce around 600 per month :-)
