A new bread

In my local Tesco's yesterday I saw a shelf for bread with *an
invisible crust* The label said it was out of stock though.
My question is, How do they know it's out of stock? because if it has
an invisible crust then surely the whole loaf is invisible so you can't
see if there are any on the shelf :/
