What is the best way to cook a sweet potato ?

Ray's tried that but it doesn't need as long as other veg and it goes
squishy if you have much fat near it.
I've enjoyed the ones he's roasted in the past, though.

Thank you all for your suggestions, I have a few recipes to try out now,
tonight I roasted them in the oven in olive oil with some basil and they
were delicous, I will try all your ideas out next time I get some more sweet
potatos :-)

Chop it up, boil it until soft then mash it with butter. That's my
favorite, served with lamb shank.

Sweet potato is called Kumara in New Zealand where it's almost a
national dish. You can get Kumara chips with your fish.

Oh yes, and I make Jack potato chips with parsnip and sweet potato chips.
Theyre all nice deep fried with salt on. :-)

Thank's for the replies, I might try roasting it in olive oil with some
herbs on it, should I parboil or microwave it first, I usually do that with
ordinary potatos, btw, does it taste sweet ?

No. put it in raw. And with next to no oil because it will go all soggy.
It's sweeter than an ordinary potato but not sweet enough to be called
sweet, if you see what I mean!

I had a baked one when I was in Florida this year, which was lovely. But I
was completely thrown when I was asked if I wanted sugar on it. Never
occured to me to add sugar to a sweet potato! And I didn't, because I
didn't really fancy it with chargrilled tuna. :-)

I would chop it up to bite size chunks and add it to my other veggies
for roasting.

Just spread them all out in a roasting dish and roast for about 40
minutes.

Thank's Gareth, those pic's are mouth watering, what did you put in your
home made baclava besides the honey and nuts, it looked to have something
pink in it ? it's the first time this year in Greece that we didn't succumb
to it, we were trying to be good ;-)seems you are quite a good chef and
like using unusual fruit and veg etc, is cooking one of your hobbies ?

Ah, thanks for pointing that out, I've now changed the wording. ;-)

The first two pics showing the pastry were a standard baklava (taken
3rd Feb 2006) but the pics of the sliced dessert were a variation of
mine (taken 25 March 2006) made the same way but using chopped dried
mixed fruits (the sort you buy in a little packet i.e. 'Tropical Mix'
from Golden Sunrise Foods) comprising pineapple, papaya, apricot and
cranberries.

I love cooking (eating!) and am an ex French cuisine restaurateur.

Whatever he does with it it's lovely:)
He sometimes serves it with carrot and turnip, all mashed up together and it
really livens up the taste of the carrot and turnip:)

Or you can roast them like potatos. Just make sure they are about double the
size of the potato or you will find they burn.

I really should read the whole thread before I jump in shouldn't I.

On the same sort of note as Gareth I make a roasted mix for special
occasions.
Carrot, parsnip, potato, leek, sweet potato, baby onions and garlic ( as big
or small as you like) with sprigs of fresh rosemary and a little red palm
and canola oil that we found in Asda. Yummy.
