Microwave Boiled Fruit Cake
225g (8oz) mixed dried fruit
100g(4oz) block margarine
225ml (8 fl oz) strong black tea
100g (4oz) soft dark brown sugar
225g (8oz) Self Raising Flour
1tsp bicarbonate soda
1tsp mixed spice
1 egg
Put fruit in large bowl. Cut margarine into small pieces and mix with
fruit. Pour tea over fruit and marg mix. Microwave 4 mins. Remove
from microwave, stir in sugar and leave until cold. Sieve flour, bicarb
and spice and beat into fruit mixture, with egg. Line a 20cm (8") round
dish with cling film and add the mixture.
Microwave for 7 mins
Leave to stand for 15 mins and turn on to a wire rack to cool
Now as I have had this recipe written in my book for some time and
haven't made it lately I rather think the times given will be for 650 or
D microwave so you may need to play around with the timings for an 800 E

I've had a Google, but most use water or alcafrol, and I need one that
uses tea.
It's for one of my customers who has lost her favourite recipe :o(
